Bengaluru-based cafe chain Third Wave Coffee has appointed Sanjay Dutta as its Chief Technology Officer (CTO). He will lead the company’s technology plans as Third Wave Coffee continues to expand its stores and strengthen its digital operations. Sanjay brings more than 25 years of experience in technology, IT operations, digital transformation and enterprise systems. He has worked across the restaurant, retail, manufacturing and consumer sectors.
Before joining Third Wave Coffee, Sanjay was the CTO at Theobroma Foods, where he led technology projects for the company’s planned expansion, including enterprise systems, CRM, cloud technology, data strategy and AI. He also worked as the founder and Technology Consultant at an Independent Advisory, providing CTO-level advice to restaurant, supply chain, retail and education businesses.
Earlier, Sanjay was Vice President of Technology at Gourmet Investment, working with brands such as PizzaExpress, Chili’s, Ministry of Crab and Typhoon Shelter. He also served as head of IT for KFC and Pizza Hut at Sapphire Foods India, where he helped bring multiple franchise businesses onto one IT platform covering more than 450 stores.
Dutta spent over eight years at McDonald’s India – North and East as General Manager of IT, handling digital ordering, payments and enterprise technology. His earlier roles include Senior Manager of IT at Mitsui & Co. India, Assistant General Manager of EDP at Jaquar & Company, and Officer EDP at Shiv-Vani Oil & Gas Exploration Services.
Sanjay holds a Project Management degree from IIM Ahmedabad.
This appointment comes as Third Wave Coffee enters an aggressive growth phase. The company raised ₹408 crore (around $43 million) in a funding round led by WestBridge Capital, with participation from Creaegis and angel investors. Third Wave currently has around 240 outlets and plans to reach 320 stores by FY27, with a long-term goal of 400–500 stores.
